Whole peeled chestnuts from the Piedmont region of Italy are immersed for nine days in water to reduce the tannins and refine the flavour of the fruit, through natural fermentation, then the chestnuts are ready to be immersed in a candying syrup, made with added sugar and vanilla, until they reach their natural saturation.

We then individually wrap each candied chestnut with a small amount of the syrup to keep them soft, moist and full flavoured.
